MAKES: 3 cups
WHAT'S IN IT?
3/4 cup extra virgin olive oil
130g basil, leaves only
160g pine nuts (you could also use cashews)
160g parmesan, cut in chunks
1/2 lemon, juiced
salt
PUTTING IT ALL TOGETHER:
WATCH THIS...
1. Add all ingredients into a blender or food processor and wizz until combined. Place in a sterilised jar and cap with oil. Store in the fridge and enjoy with pasta, in eggs, as a coating for chicken or as a sauce on the side of any meal!
