CHICKEN NUGGETS WITH SPECIAL SAUCE

Ingredients
1 litre rice bran or vegetable oil for deep frying
2 chicken breasts, cut into 3cm cubes (they don't need to be perfect)
1 1/2 cups plain flour
3 eggs, lightly whisked
2 cups panko breadcrumbs
1 tsp chilli powder
3 tsp smoked paprika
2 tsp garlic powder
1 Tbsp salt
Sauce
2 Tbsp hot sauce
2 Tbsp bbq sauce
3 Tbsp kewpie mayonnaise
Method
Step 1. Place the flour, eggs and breadcrumbs into 3 separate bowls. Add the chilli powder, smoked paprika, garlic powder and salt to the flour and mix through.
Step 2. Coat the chicken in flour, then egg and then breadcrumbs. Place onto a tray.
Step 3. Heat the oil in a pot. Fry the chicken nuggets for 3-4 minutes in batches and drain on paper towel. Season with salt.
Step 4. To make the sauce, mix all of the ingredients in a small bowl.
Notes
Test the readiness of the oil by dipping the handle of a wooden spoon in the oil. When it bubbles, it is ready for frying. If you have a thermometer, heat the oil to 160C.
