TOMATO & BEAN SALAD
A simple and fresh dish to serve as a starter or side for your next picnic or Sunday lunch.

Ingredients
3 ripe Roma tomatoes, chopped
1 400g tin good quality cannellini beans, drained and rinsed
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
1 long red chilli, finely sliced
1 clove garlic, minced
1 small handful flat leaf parsley, finely chopped
1/2 lemon
Sea salt
Pepper
Method
Step 1. Place the tomatoes and beans in a bowl.
Step 2. Place the red wine vinegar, olive oil, chilli and garlic in a small bowl and whisk together to emulsify. Season with salt, pepper and lemon juice to taste.
Step 3. Add the dressing to the tomatoes and beans. Add the parsley and mix through evenly. Adjust seasoning and serve with crusty bread.
