PEA, BEAN & HERB SALAD WITH FETA
Simple and super fresh. A healthy, vibrant picnic salad or side dish for entertaining.

Ingredients
100g spring peas or baby peas, fresh or frozen
200g green beans, trimmed
100g snow peas, trimmed
80g crumbly feta cheese
1 small bunch fresh mint leaves
1 lemon
Extra virgin olive oil
Method
Step 1. Two things to get your started, one: bring a large pot of water to the boil and add a tablespoon of salt, and two: make an ice bath by filling a large bowl halfway with ice and water.
Step 2. Place the peas, beans and snow peas into the boiling water and blanch for 2-3 minutes. Remove with a slotted spoon and place immediately into the ice bath to cool completely for around 5 minutes then strain.
Step 3. To assemble the salad, place the blanched greens into a large bowl. Crumble half of the feta over the top and add half of the mint leaves. Drizzle over olive oil, the zest of half a lemon and a generous squeeze of lemon juice. Season with flaked sea salt to taste and toss together. Taste and adjust seasoning to your liking.
Step 4. Arrange on a salad platter or in a bowl. Top with the rest of the feta and mint
