CHOCOLATE SELF SAUCING PUDDING
An easy rich and chocolatey dessert for two. Simple to remember. No leftovers.

Ingredients
80g dark chocolate, roughly chopped
80g unsalted butter, plus more for greasing
80g brown sugar
3 eggs
80g plain flour, sifted
1 Tbsp cocoa powder
Method
Step 1. Preheat the oven to 200C and grease a small baking dish with butter.
Step 2. Melt the chocolate and butter in a small bowl over a pot of simmering water. Set aside to cool slightly.
Step 3. Beat the eggs and sugar together with an electric mixer for 4-5 minutes or until tripled in size. Gently fold the egg mix through the melted chocolate followed by the flour.
Step 4. Pour into the baking dish and bake for 8-10 minutes. Dust with cocoa powder. Serve with ice cream.
