BAKED FISH
An easy, flavourful one pan fish dish made with simple ingredients. Perfect for lunch or dinner and even better, you can cook it for 1, or you can make it for 20! Just scale the recipe up or down!!

Ingredients
The Mix
8 ripe tomatoes, roughly chopped
1 brown onion, roughly chopped
5 garlic cloves, roughly chopped
Large handful fresh oregano leaves
2 tsp smoked paprika
1 tsp chilli flakes
2 Tbsp Olive Oil
2 Tbsp red wine vinegar
2 tsp sea salt
1 Tbsp sugar
235g jar green pitted olives, drained
The fish
2 firm white medium fish fillets like kingfish or blue-eye trevalla
Plain flour, to coat the fish
2 Tbsp olive oil
2 Tbsp breadcrumbs
Sourdough toasted, to serve
Method
Step 1. Preheat the oven to 200C. Slowly bring a medium cast iron or heavy based oven proof skillet to medium-high heat.
Step 2. Place the mix ingredients in a bowl and toss together and season with salt. Add the mix to the hot pan with 1/2 a cup of water and cover with a lid. Simmer for around 15 minutes, stirring occasionally.
Step 3. Dust the fish with flour and place on top of the sauce.
Step 4. Drizzle the fish with olive oil and sprinkle some breadcrumbs over the top.
Step 5. Place the pan in the oven and bake for 10-15 minutes or until the fish is just cooked through. Serve with toasted crusty bread.
Notes
This recipe can be done with any firm fish or even prawns or octopus.
