SWEET POTATO, AVO AND QUINOA SALAD
This salad is the perfect healthy lunch. Full of flavour and texture, you can eat this any day of the week on its own or with any protein of choice.

Ingredients
3/4 cup quinoa
1 medium sweet potato, peeled and cut into 2cm cubes
1 ripe avocado, sliced
1/3 cup currents, raisins or saltunas
1/3 cup roasted almonds, roughly chopped
60g rocket leaves
Herby yoghurt dressing
1/2 cup greek yoghurt
2 Tbsp extra virgin olive oil
1/2 clove garlic, minced
1 Tbsp lemon juice
2 Tbsp fresh coriander, finely chopped
1 Tbsp fresh mint, finely chopped
Sea salt to taste
Method
Step 1. Preheat the oven to 200C. Place the sweet potato on a baking tray and drizzle with olive oil. Season with salt and bake for 20 minutes or until golden. Set aside to cool completely.
Step 2. Rinse the quinoa and add to a pot with 1 1/2 cups of water. Cover with a lid and bring to a boil before turning down to a simmer. Cook for 15-20 minutes or until the water has absorbed. Remove from the heat and allow to cool completely.
Step 3. To make the dressing, combine all of the ingredients in a bowl and season with salt to taste. Adjust the flavour to your liking.
Step 4. Toss all of the salad ingredients together except for the avocado and present in a bowl or on a platter. Top with sliced avocado and pour over half of the dressing, serving the rest on the side.
